WUYW: White Bean and Spinach Soup with Chicken and Smoked Sausage, (Chef Geoff)

It's soup season and Chef Geoff shares an easy and healthy soup to warm you up: White Bean and Spinach Soup with Chicken and Smoked Sausage.

INGREDIENTS

  • 1/4 pound fully smoked sausage, sliced
  • 1 grilled chicken breast diced
  • 1 tablespoons olive oil
  • 1 clove garlic, minced
  • 3 cups low-sodium chicken broth
  • 8 oz cannellini beans, rinsed and slightly mashed
  • 2 cups spinach, torn
  • kosher salt and black pepper to taste

DIRECTIONS

  • Brown the sausage in the oil in a large pot over medium-high heat, 3 to 5 minutes.
  • Add the diced chicken and garlic and cook, stirring, for 1 minute.
  • Add the chicken broth, beans, spinach, salt, and pepper.
  • Simmer until the spinach is tender, 8 to 10 minutes.
