Whip Up Your Weekend: Summer Squash



    INGREDIENTS

    1 medium-size yellow squash

    1 medium-size zucchini

    1/2 small onion

    1 tablespoon olive oil

    1 minced garlic clove

    salt and pepper

    pinch of fresh herbs

    1 tablespoon of butter

    Directions

    Cut squash and zucchini into 1/4-inch-thick slices, and chop 1/2 small onion. Sauté vegetables in 1 tablespoon olive oil in a large skillet over high heat 2 minutes. Add 1 minced garlic clove, herbs, butter and sauté 1 minute. Sprinkle mixture with salt and pepper to taste.
