Whip Up Your Weekend: Apple Walnut Blondies

Whip Up Your Weekend: Apple Walnut Blondies, (Sydney Glenn/WPDE)

October marks the start of National Apple Month. You can celebrate by whipping up a simple batch of apple walnut blondies.

  • 1/2 cup butter, melted
  • 1 cup white sugar
  • 1 egg
  • 1 medium apple - peeled, cored and thinly sliced
  • 1/4 cup chopped walnuts
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • In a large bowl, beat together the melted butter, sugar, and egg until mixed. Fold in the apple and walnuts. In a separate bowl, sift together the flour, salt, baking powder, baking soda, and cinnamon. Mix all the dry ingredients into the wet mixture until just blended. Scoop the batter evenly in the prepared baking dish.
  • Bake 15-20 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.
