Whip Up Your Weekend: four ingredient tempura

Sunday marked National Tempura Day. You can celebrate with this simple recipe.
- 1 egg
- 1 cup cold water
- 3/4 cup plain flour
- 1 pinch baking soda
- Beat the egg and icy cold water together until light and fluffy.
- Add the flour and baking soda to the egg mixture and mix together quickly. Do not over-beat mixture.
- Use to coat fish, prawns, scallops or vegetable slices.
- Always make sure your frying oil is very hot (375 works well) , I use canola oil.
