Whip Up Your Weekend: Gluten Free Vegan Chocolate Chip Cookies

Can cookies be healthy and delicious? Chef Geoff says these gluten free vegan chocolate chip cookies are.

Ingredients:

  • Natural sunflower butter 3 oz
  • Coconut fat softened 2 ¾ oz
  • Coconut sugar 5 oz.
  • Chia eggs 1.5 oz
  • Salt 1/4 tsp.
  • Vanilla extract 1 tsp
  • Baking soda 1 tsp
  • Almond flour 3 ½ oz
  • Coconut flour 1 oz
  • Paleo chocolate chips 6 oz

Directions:

  • Cream together first three ingredients.
  • Add the chia egg and vanilla.
  • Mix in the rest of the ingredients.
  • Scoop cookies and press flat
  • Bake 350 degrees
  • 10-12 minutes
