Whip Up Your Weekend: Crust less Coconut and Macadamia Pie, (WPDE)

Monday is National Macadamia Nut day! You can celebrate with an easy Crust less Coconut and Macadamia Pie.

Ingredients:

  • 3 eggs
  • 1 ¾ cups of heavy cream
  • 1 tsp vanilla
  • 1 oz melted butter
  • 1 cup sugar
  • ¼ cup flour
  • 1tsp baking powder
  • ¼ tsp salt
  • 3 oz coconut flake
  • 3 oz toasted macadamia nut

Procedure:

  • Mix eggs, cream, vanilla, and butter until creamy.
  • Add sugar, flour, baking powder, and salt until incorporated.
  • Fold in the macadamia nuts and coconut. Scoop into heavily sprayed muffin tins and bake for 20-30 minutes at 350 degrees Fahrenheit. Cool and remove from pans. Serve with Whipped Cream.
